• The law
• Food safety hazards
• Microbiology
• Taking temperatures
•  Refrigeration, chilling and cold holding of foods
•  Cooking, hot holding and re-heating of foods
•  Food handlers
•  Principles of safe storage
•  Cleaning
•  Food premises and equipment

The course also covers food poisoning. How it occurs and how it can be recognized and prevented. Pathogenic organisms and how binary fusion works along with storage methods. The course is interactive and has videos to vary the learning.
